Healthy Banana split

It's national banana split day on the 25th August in America but I don't want to miss out in the UK so here is my recipe for a healthy, delicious banana split treat! Tastespotting and Dole Bananas are challenging people to create a banana split recipe that's both healthy and under 350 calories...

I'm not sure how many calories are in my recipe but I've kept the ingredients as healthy, fresh and natural as possible. The three ice creams are made from a base of frozen bananas and mixed with fresh strawberry, cocoa powder and dark chocolate and vanilla extract flavours. Each were mixed with a tablespoon of honey and coconut milk to create a sweeter, creamier texture. The split bananas are glazed in honey and covered with chopped macadamia nuts, and the ice cream is topped with {a little bit of} whipped cream and fresh cherries...

Healthy Banana Split

  • 4 bananas, the riper the better (I used Dole bananas, of course!)
  • 3 tbsp coconut cream
  • 6 strawberries
  • 1 tbsp cocoa powder
  • 80g dark chocolate, melted
  • 1 tbsp vanilla extract
  • 5 tbsp honey
  • 80g macadamia nuts, chopped
  • 3 squirts of whipped cream
  • 3 cherries

If you have an ice cream maker, you can skip step 1 and put the blended mixture into your ice cream maker.
  1. Peel and chop 3 bananas and leave them to freeze well (minimum 5 hours)
  2. When the bananas are well frozen, split them into 3 equal amounts.
  3. For the first ice cream, vanilla, blend one portion of the frozen bananas with the vanilla extract, 1 tbsp of honey and 1 tbsp of coconut cream. Leave in the freezer to firm up.
  4. For the strawberry ice cream, blend one portion of the frozen bananas, the strawberries, 1 tbsp of honey and 1 tbsp of coconut cream.   Leave in the freezer to firm up.
  5. And for the last ice cream, chocolate, blend the last of the frozen bananas, the cocoa powder and melted chocolate, 1 tbsp of honey and 1 tbsp of coconut cream. Leave in the freezer to firm up.
  6. Next, split the remaining banana in half length-ways and glaze with honey (I used a basting brush to paint the honey on) and then coat the bananas in the chopped macadamia nuts by dipping them into a bowl-full.
  7. When the ice cream is firm, scoop 1 spoon full of each flavour into small balls and line up between the banana halves.
  8. Squirt a small bit of cream on top of each ice cream dollop and garnish with a cherry on top ^__^

Oh my! This was the most indulgently delicious dessert I've had in a long time AND it's so healthy. Just fruit, honey, nuts, dark chocolate and cream. This can easily be made vegan / dairy-free by substituting the whipped cream for whipped coconut cream. Make sure you remember to celebrate banana split day on the 25th, even if you're not in the US like me. Any excuse for an indulgent treat...
